This week’s recipe is Banana Bread. One of my favorite snacks is a slice of banana bread with a little spread of butter. Enjoy!
Banana Bread
Ingredients:
1 ½ Cups All-Purpose Flour
1 ½ Teaspoons Baking Powder
¼ Teaspoon Baking Soda
¼ Teaspoon Salt
¼ Teaspoon Ground Nutmeg
¼ Teaspoon Ground Cinnamon
½ Cup Shortening
½ Cup Granulated Sugar
½ Cup Packed Light Brown Sugar
1 Teaspoon Vanilla
2 Eggs
1 Cup Mashed Ripe Bananas (3 medium bananas)
½ Cup Chopped Walnuts
Directions:
Grease bottom and ½ inch up sides of an 8×4x2-inch loaf pan and set aside.
Combine flour, baking powder, baking soda, salt, nutmeg, and cinnamon; set aside.
Beat shortening in large bowl with an electric mixer on medium to high speed 30 seconds.
Add sugars and vanilla; beat till well combined.
Add eggs, one at a time, beating well after each.
Add bananas; beat till combined.
Use a wooden spoon to add dry mixture to beaten mixture, stirring just till moistened (batter should be lumpy).
Fold in walnuts.
Spoon batter into prepared pan.
Bake in a 350-degree oven for 55-60 minutes or till a wooden toothpick inserted near center comes out clean.
(If necessary, cover the bread loosely the last 10 minutes of baking to prevent over-browning.)
Cool in pan on a wire rack 10 minutes.
Remove loaf from pan; cool on rack.
Wrap and store overnight.
Makes 1 loaf (16 slices)
